This was the first recipe I ever made using a rotisserie chicken. Honestly the recipe is so much more flavorful made with a rotisserie chicken than with either a whole chicken or just chicken breasts I had to cook myself.
Ingredients
1 traditional or plain rotisserie chicken, meat removed from bones
1 medium onion, chopped
1 green pepper, chopped
1 package Vigo yellow rice (or similar brand)
Directions
Dump all ingredients in a large pot, I prefer a nonstick one myself. Add water as required by instructions on rice package. Bring to boil. Reduce heat to a simmer. Cover. Set timer for 20 minutes.
*hint... check rice at 10 minute mark, and 15 minute mark, sometimes I need to add an extra 1/2 cup of water.
